If you like a little spice, this unusual but delicious pizza, studded with antioxidant-rich black beans, fits the bill.

Recipe Ingredients:

1 frozen pizza dough (about 10 oz), store-bought, thawed

2 tbsp olive oil

1 can (16 oz) black beans, rinsed and well drained

6 oz crushed, fire-roasted canned tomatoes, strained

1 jalapeno or Serrano pepper, seeded and sliced thinly

6 oz low-fat jack cheese, shredded

Salt and pepper

Preparation:

Preheat oven to 450 degrees F. Prepare pizza dough per the manufacturer’s instructions. Coat the underside with olive oil and place on round pan (pizza can be made into a rectangle if a round pizza pan is not available).

Top dough with beans, crushed tomato, and pepper. It is important that all ingredients have been strained very well; if too wet, the dough will not cook properly and be soggy. Place ingredients evenly on top of dough. Season with salt and pepper.

Cook pizza without cheese for 15 minutes. Remove from oven and top with cheese. Cook 5 to 10 minutes depending on desired texture.

To serve, cut pizza into four equal pieces using a pizza wheel or sharp knife. (Two pieces = one serving.)
